Doro Wat
A traditional Ethiopian dish, Doro Wat is a rich and flavorful stew of chicken.

Ingredients
- 500g of chicken, cut into pieces
- 2 eggs
- 2 onions, sliced
- 4 garlic cloves, minced
- 1 whole red pepper, sliced
- 2 teaspoons of cayenne pepper
- 1 teaspoon of sugar
- 1/2 teaspoon of bay leaf
- 1/2 teaspoon of parsley
- 1/2 teaspoon of thyme
- 1/2 teaspoon of red pepper
- 2 tablespoons of olive oil
Method
- In a large pot, heat the olive oil and sauté the onions until they become golden.
- Add the garlic and red pepper, sauté for a few minutes.
- Add the chicken, season with cayenne pepper and cook for 10-15 minutes until it is golden.
- Add the eggs, stirring well to ensure they set.
- Add the red pepper, sugar, parsley, thyme, and bay leaf, stir and simmer on low heat for 20-25 minutes until the chicken is fully cooked.
- Serving: Serve the Doro Wat hot with Ethiopian bread or rice.
The story
Originally created by Ethiopian farmers as a way to add moisture to their meals using eggs, Doro Wat has since become a popular specialty dish.
