Dolmades

A traditional Greek dish that combines the sweetness of the vegetables with the aromatic spices.

Ingredients
- 1 kg of spinach
- 1 onion
- 200 g of zucchini
- 100 g of lentils
- 100 g of rice
- 10 grape leaves
- 1 tablespoon of sugar
- 1 tablespoon of vinegar
- 1 teaspoon of black pepper
- 1 teaspoon of ginger
- 1 teaspoon of bay leaf
- extra virgin olive oil
Method
- Finely chop the onion and sauté it in a pan with extra virgin olive oil.
- Add the spinach and cook until it is completely wilted.
- Slice the zucchini thinly and sauté them in a pan with extra virgin olive oil.
- In a pot, cook the lentils with a little water and a teaspoon of black pepper.
- Mix the rice with sugar, vinegar, ginger, and parsley.
- Fill the grape leaves with the spinach, zucchini, lentils, and rice mixture.
- Drizzle the dolmades with extra virgin olive oil and cook for about 30 minutes on medium heat.
- Serve hot with a sprinkle of black pepper and bay leaf.
The story
Dolmades are a dish with ancient roots, known throughout Greece and in Greek communities worldwide. It is believed that they were introduced to Greece by the Romans.
