A delicious jus from Ziguinchor, Senegal, made with dawadawa, a condiment based on Cajanus cajan grains.

Ingredients

  • 100g of dawadawa
  • 200ml of water
  • 2 onions
  • 2 garlic cloves
  • 1 chili pepper
  • 1 tablespoon of Cayenne pepper
  • 1 tablespoon of palm oil
  • Salt to taste

Method

  1. In a pot, boil water and dawadawa for 10 minutes.
  2. Mince the onions and garlic.
  3. In a pan, sauté the onions and garlic in palm oil.
  4. Add the chili pepper and Cayenne pepper and cook for 2 minutes.
  5. Add the dawadawa and boiling water, stirring well.
  6. Bring to a boil and cook for another 5 minutes.
  7. Mince the chili pepper and add it to the jus.
  8. Serve the jus hot in a bowl.

The story

The jus de dawadawa is a traditional dish from the Ziguinchor region in Senegal, dating back to the ancient agricultural and culinary practices of the Diola people.
