Dawadawa Sauce

A delicious jus from Ziguinchor, Senegal, made with dawadawa, a condiment based on Cajanus cajan grains.

Ingredients
- 100g of dawadawa
- 200ml of water
- 2 onions
- 2 garlic cloves
- 1 chili pepper
- 1 tablespoon of Cayenne pepper
- 1 tablespoon of palm oil
- Salt to taste
Method
- In a pot, boil water and dawadawa for 10 minutes.
- Mince the onions and garlic.
- In a pan, sauté the onions and garlic in palm oil.
- Add the chili pepper and Cayenne pepper and cook for 2 minutes.
- Add the dawadawa and boiling water, stirring well.
- Bring to a boil and cook for another 5 minutes.
- Mince the chili pepper and add it to the jus.
- Serve the jus hot in a bowl.
The story
The jus de dawadawa is a traditional dish from the Ziguinchor region in Senegal, dating back to the ancient agricultural and culinary practices of the Diola people.
