Ingredients

  • 250 g of flour
  • 100 g of sugar
  • 50 g of butter
  • 1/2 cup of milk
  • 2 eggs
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1 teaspoon of warm water
  • 1/2 teaspoon of vanilla extract

Method

  1. In a bowl, mix the flour, sugar, baking soda, and salt.
  2. In another bowl, mix the butter with the milk, eggs, warm water, and vanilla extract until you get a smooth mixture.
  3. Add the liquid mixture to the flour, mixing until you get a homogeneous dough.
  4. Shape the dough into balls about 2 cm in diameter and place them on a baking tray or a fire hearth.
  5. Bake at 180°C for about 20-25 minutes, until the damper is golden and dry.
  6. Let the damper cool before serving.

Damper has its origins with Australian pioneers who would prepare it with limited and primitive ingredients such as flour, sugar, and butter.
