A delicious, crunchy vegetable stew with a rich flavor, typical of the Luxor region in Egypt.

Ingredients
- 200g of zucchini, sliced
- 150g of pumpkin, cubed
- 100g of onion, chopped
- 50g of carrots, diced
- 200ml of olive oil
- 1 liter of chicken broth
- 1 tablespoon of red peppers, sliced
- 1 tablespoon of tomatoes, sliced
- 1 tablespoon of mint, chopped
- Salt and pepper to taste
- 1 tablespoon of wine vinegar
Method
- In a large pot, heat the olive oil over medium heat and add the chopped onion, sauté for 5 minutes.
- Add the zucchini, carrots, and pumpkin, sauté for another 10 minutes.
- Pour in the chicken broth and bring to a boil, then reduce heat and let it simmer for 20 minutes.
- Add the peppers and tomatoes, cook for another 5 minutes.
- Finally, add the mint, salt, and pepper to taste, and wine vinegar. Stir well and let it boil for 5 minutes before serving.
- Final touch: Serve hot in a bowl and garnish with fresh mint leaves.
