A traditional Dalat dish, Cơm niêu from Dalat is a warm and delicious meal cooked in a clay pot.

Ingredients

  • 200 g of basmati rice
  • 400 ml of chicken broth
  • 100 g of red bell peppers, sliced
  • 100 g of green bell peppers, sliced
  • 100 g of onion, sliced
  • 50 g of ginger, chopped
  • 50 g of garlic, sliced
  • 100 g of seasonal vegetables (zucchini, carrots, etc.)
  • 50 g of toasted almonds
  • 50 g of chili powder
  • 100 ml of coconut oil
  • Salt and pepper to taste

Method

  1. In a clay pot, heat the coconut oil and add the sliced garlic and ginger. Cook over medium heat for 2-3 minutes.
  2. Add the sliced onions and seasonal vegetables, cook for 5 minutes.
  3. Add the red and green bell peppers, cook for another 3 minutes.
  4. Add the rice, chicken broth, chili powder, toasted almonds, and salt and pepper to taste. Stir well.
  5. Cover the pot and cook over low heat for 20-25 minutes.
  6. Let it rest for 10 minutes before serving.

The story

Cơm niêu from Dalat originated in the countryside around the city, where farmers used their traditional cooking knowledge to prepare this dish in a clay pot.
