Ingredients
- 400 g of shrimp
- 200 g of zucchini
- 100 g of red bell peppers
- 1 onion
- 2 cloves of garlic
- 2 teaspoons of cayenne pepper
- 1 teaspoon of coriander
- 1 teaspoon of cumin
- 1 teaspoon of ginger
- 1 teaspoon of chili powder
- 1 liter of fish stock
- 2 tablespoons of coconut oil
- Salt and pepper to taste
Method
- Clean and cut the shrimp and vegetables into pieces.
- Sauté the onion in coconut oil.
- Add the spices and sauté for a few minutes.
- Add the fish stock and bring to a boil.
- Add the shrimp and vegetables, cook on medium heat for 15-20 minutes.
- Serve hot with rice or sweet potatoes.
