Ingredients

  • 4 crocodile tails
  • 2 onions
  • 2 carrots
  • 2 lamb shanks
  • 2 zucchini
  • 1 liter of meat broth
  • 1 teaspoon of chili flakes
  • 1 teaspoon of stew spices
  • 100 ml of white wine
  • 300 g of potatoes
  • salt and pepper to taste

Method

  1. Clean and cut the crocodile tails into 5 cm pieces.
  2. In a pot, boil the tails in salted water for 15 minutes, then cool and remove the skin and fat.
  3. In a skillet, sauté the onions and carrots.
  4. Add the lamb shanks and crocodile tails, cook for 5 minutes.
  5. Add the meat broth, spices, white wine, and potatoes, bring to a boil and simmer on low heat for 2 hours.
  6. Add the zucchini and cook for an additional 30 minutes.
  7. Taste and season with salt and pepper.
  8. Serve hot with a slice of bread.

The story

The Darwin crocodile tail stew became popular in the 1970s when crocodile hunters began using the tails to prepare a local stew.
