Ingredients
- 4 crocodile tails
- 2 onions
- 2 carrots
- 2 lamb shanks
- 2 zucchini
- 1 liter of meat broth
- 1 teaspoon of chili flakes
- 1 teaspoon of stew spices
- 100 ml of white wine
- 300 g of potatoes
- salt and pepper to taste
Method
- Clean and cut the crocodile tails into 5 cm pieces.
- In a pot, boil the tails in salted water for 15 minutes, then cool and remove the skin and fat.
- In a skillet, sauté the onions and carrots.
- Add the lamb shanks and crocodile tails, cook for 5 minutes.
- Add the meat broth, spices, white wine, and potatoes, bring to a boil and simmer on low heat for 2 hours.
- Add the zucchini and cook for an additional 30 minutes.
- Taste and season with salt and pepper.
- Serve hot with a slice of bread.
The story
The Darwin crocodile tail stew became popular in the 1970s when crocodile hunters began using the tails to prepare a local stew.
