Ingredients

  • 4 cow feet
  • 1 liter of chicken broth
  • 1 onion
  • 2 carrots
  • 2 cucumbers
  • 1 chili pepper
  • 1 tablespoon of chili powder
  • 2 bay leaves
  • 1 red onion
  • 2 garlic cloves
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Method

  1. Clean the cow feet and boil them in salted water for 10 minutes, then cool them down.
  2. In a large pot, heat the olive oil and sauté the garlic and red onion.
  3. Add the carrots, cucumbers, chili pepper, and chili powder, sauté for 5 minutes.
  4. Add the cow feet, chicken broth, and bay leaves, bring to a boil and simmer for 2 hours.
  5. Dice the vegetables and add them to the broth, let it boil for 30 minutes.
  6. Season with salt and pepper to taste, serve hot.
  7. Enjoy!
