Cow Foot Soup

Ingredients
- 4 cow feet
- 1 liter of chicken broth
- 1 onion
- 2 carrots
- 2 cucumbers
- 1 chili pepper
- 1 tablespoon of chili powder
- 2 bay leaves
- 1 red onion
- 2 garlic cloves
- 1 tablespoon of olive oil
- Salt and pepper to taste
Method
- Clean the cow feet and boil them in salted water for 10 minutes, then cool them down.
- In a large pot, heat the olive oil and sauté the garlic and red onion.
- Add the carrots, cucumbers, chili pepper, and chili powder, sauté for 5 minutes.
- Add the cow feet, chicken broth, and bay leaves, bring to a boil and simmer for 2 hours.
- Dice the vegetables and add them to the broth, let it boil for 30 minutes.
- Season with salt and pepper to taste, serve hot.
