Colcannon
A traditional Irish dish, colcannon is a delightful mix of potatoes and onions cooked together with a hint of cheddar.

Ingredients
- 500g potatoes
- 200g onions
- 250g cheddar cheese
- 2 tablespoons butter
- 1 tablespoon olive oil
- salt and pepper to taste
- 2 tablespoons chopped parsley
Method
- Peel and cut the potatoes into cubes. Slice the onions thinly.
- In a large pot, heat the oil and butter, then add the onions and cook until they are golden brown.
- Add the potatoes, cover with water, and bring to a boil. Cook over medium-high heat for about 20-25 minutes, until the potatoes are soft.
- Drain the potatoes and let them cool for a few minutes. Add the cheese and parsley, mashing until you get a smooth consistency.
- Season with salt and pepper. Serve hot.
- Optional: sprinkle with some grated cheese for garnish.
The story
Colcannon has its roots in prehistoric Ireland, where farmers used potatoes and onions to prepare a simple soup. Over time, it became a festive dish, particularly popular during St. Patrick's Day.
