A hearty vegetable and meat soup in broth, typical of the Ardeal region in Romania.

Ingredients
- 2 kg of pork meat (ribs, prosciutto, and brisket)
- 1 kg of vegetables (zucchini, pumpkin, potatoes, carrots, onions)
- 2 liters of meat broth
- 1 liter of water
- 1 onion
- 2 garlic cloves
- 1 lemon
- Salt and pepper to taste
- 1 teaspoon of chili flakes
- 2 tablespoons of extra virgin olive oil
- Pears for decoration (optional)
Method
- In a large pot, add the meat broth and water. Bring to a boil and add the pork meat, cooking over medium heat for 1-1.5 hours or until the meat is well cooked.
- Meanwhile, chop the vegetables into pieces and sauté them in a pan with olive oil. Add the onion and garlic, cooking until the vegetables are soft.
- In a bowl, place the sautéed vegetables and add the meat broth with the cooked meat. Season with salt, pepper, and chili flakes to taste.
- Let the soup cool down, then blend it until smooth. Add lemon juice.
- Serve the hot soup in bowls, garnishing with pears if desired.
- Layer the flavors and enjoy this rustic soup!
