Ingredients

  • 2 kg of pork meat (ribs, prosciutto, and brisket)
  • 1 kg of vegetables (zucchini, pumpkin, potatoes, carrots, onions)
  • 2 liters of meat broth
  • 1 liter of water
  • 1 onion
  • 2 garlic cloves
  • 1 lemon
  • Salt and pepper to taste
  • 1 teaspoon of chili flakes
  • 2 tablespoons of extra virgin olive oil
  • Pears for decoration (optional)

Method

  1. In a large pot, add the meat broth and water. Bring to a boil and add the pork meat, cooking over medium heat for 1-1.5 hours or until the meat is well cooked.
  2. Meanwhile, chop the vegetables into pieces and sauté them in a pan with olive oil. Add the onion and garlic, cooking until the vegetables are soft.
  3. In a bowl, place the sautéed vegetables and add the meat broth with the cooked meat. Season with salt, pepper, and chili flakes to taste.
  4. Let the soup cool down, then blend it until smooth. Add lemon juice.
  5. Serve the hot soup in bowls, garnishing with pears if desired.
  6. Layer the flavors and enjoy this rustic soup!
