Ciorbă de Ceapă cu Sarmale

A traditional Romanian soup that combines the freshness of the leek with the salty taste of the sarmale.

Ingredients
- 2 kg of leeks
- 400 g of sarmale
- 2 onions
- 2 meat skewers
- 1 liter of meat broth
- 1 liter of water
- 500 g of potatoes
- 500 g of zucchini
- 1 tablespoon of olive oil
- Salt and pepper to taste
- 1 tablespoon of dried cucumber
- 1 teaspoon of vinegar
Method
- Peel the leeks, slice them thinly, and set aside.
- In a pot, heat the olive oil and sauté the finely chopped onions and garlic.
- Add the sarmale and meat skewers, sauté for a few minutes.
- Add the meat broth, water, cubed potatoes, and sliced zucchini.
- Bring to a boil, reduce heat, and simmer for 30-40 minutes.
- Add the leeks, dried cucumber, and vinegar. Cook for another 10-15 minutes.
- Serve hot in bowls with a bit of salt and pepper.
