Chuchichäsli
A traditional dish from the Sanetsch valley, Chuchichäsli is a hearty mix of meats and vegetables cooked in one pot.

Ingredients
- 2 kg of pork meat (bacon, pork belly, rib roast)
- 1 kg of vegetables (potatoes, zucchini, pumpkin, carrots, onions)
- 2 liters of meat broth
- 1 tablespoon of olive oil
- salt and pepper to taste
- 1 onion
- 2 garlic cloves
- 100 ml of white wine
- 100 g of lard
- 100 g of grated cheese
Method
- In a large pan, sauté the garlic and olive oil.
- Add the bacon and rib roast, cooking until the meat is browned.
- Add the vegetables, carrots, onions, salt, and pepper, and sauté for 15-20 minutes.
- Pour in the meat broth and white wine, cover, and cook on low heat for 2 hours.
- Add the lard and grated cheese, stir well, and cook for another 30 minutes.
- Serve hot, accompanied by toasted bread.
