Chinchorro de Pollo al Chile

Ingredients
- 4 chickens, cut into pieces
- 200 g of dried chili peppers, boiled and chopped
- 4 onions, sliced
- 2 tablespoons of olive oil
- 1 lemon
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 100 ml of chicken broth
- 100 ml of water
Method
- In a large pot, heat the olive oil and sauté the onions until golden brown.
- Add the boiled and chopped dried chili peppers and fry for 5 minutes.
- Add the chicken pieces, salt, and black pepper, stirring well.
- Pour in the water and chicken broth, bringing to a boil.
- Reduce the heat and sprinkle with lemon juice, allowing to simmer slowly for 30 minutes.
- Serve hot, garnished with chopped chili peppers.
