Chilaquiles
A classic Mexican warm and filling dish made with tortilla chips, green salsa, and cheese.

Ingredients
- 200g of corn tortillas
- 300ml of green salsa
- 150g of sour cream
- 3 onions
- 2 tablespoons of oil
- 1 red onion
- 1 chili pepper
- 1 cup of cream
- Salt to taste
- Pepper to taste
- 1 tablespoon of minced garlic
Method
- Cut the corn tortillas into pieces about 2x2 cm and put them in a bowl.
- In a hot pan, sauté the onions, red onion, and chili pepper in oil.
- Add the green salsa and chili pepper, stir well and let it heat up.
- In a bowl, mix the cream with the sour cream.
- Add the tortilla pieces to the salsa and stir until they are well coated.
- Arrange the coated tortilla pieces on a warm plate and pour the cream and cheese mixture over them.
- Serve the tortilla pieces immediately with salt and pepper to taste.
The story
Chilaquiles are a traditional Mexican dish that dates back to pre-Columbian times, when the Aztecs used corn tortillas to create rich and flavorful dishes.
