Ingredients

  • 400 g of chicken, cut into pieces
  • 100 g of green olives
  • 50 g of preserved lemons
  • 2 onions
  • 2 cloves of garlic
  • 100 ml of olive oil
  • 100 ml of water
  • 1 tablespoon of black pepper
  • 1 tablespoon of ground ginger
  • 2 mint leaves
  • Salt to taste
  • 1 tablespoon of vinegar

Method

  1. In a large pot, heat the olive oil and sauté the garlic and onions until they become golden brown.
  2. Add the chicken and cook for a few minutes until it is well cooked.
  3. Cut the preserved lemons into pieces and add them to the pot along with the green olives.
  4. Add the water, black pepper, ground ginger, and vinegar. Stir well.
  5. Cover and cook on low heat for about 30-40 minutes, checking occasionally to make sure the water does not completely evaporate.
  6. Just before serving, add the mint leaves and gently stir.
  7. Serve the tagine hot, seasoned with a bit of salt to taste.
