Chicken Tagine with Green Olives and Preserved Lemons

A delicious chicken tagine with green olives and preserved lemons, typical of Marrakech, Morocco.

Ingredients
- 400 g of chicken, cut into pieces
- 100 g of green olives
- 50 g of preserved lemons
- 2 onions
- 2 cloves of garlic
- 100 ml of olive oil
- 100 ml of water
- 1 tablespoon of black pepper
- 1 tablespoon of ground ginger
- 2 mint leaves
- Salt to taste
- 1 tablespoon of vinegar
Method
- In a large pot, heat the olive oil and sauté the garlic and onions until they become golden brown.
- Add the chicken and cook for a few minutes until it is well cooked.
- Cut the preserved lemons into pieces and add them to the pot along with the green olives.
- Add the water, black pepper, ground ginger, and vinegar. Stir well.
- Cover and cook on low heat for about 30-40 minutes, checking occasionally to make sure the water does not completely evaporate.
- Just before serving, add the mint leaves and gently stir.
- Serve the tagine hot, seasoned with a bit of salt to taste.
