Chicken Soup (Goulash) from Haifa

A delicious and warming chicken soup, typical of Haifa, combining the taste of goulash with the tender chunks of chicken.

Ingredients
- 4 chickens, cut into pieces
- 1000 ml chicken broth
- 2 onions, chopped
- 2 carrots, cubed
- 2 zucchinis, sliced
- 1 chili pepper
- 1 lemon
- 100 g flour
- 500 ml milk
- salt and pepper to taste
- 2 tablespoons olive oil
- 2 cloves of garlic, chopped
Method
- In a large pot, heat the olive oil and sauté the garlic and onions until they are golden brown.
- Add the chicken pieces and cook for 5-7 minutes.
- Add the carrots, zucchinis, and chili pepper, and cook for another 5-7 minutes.
- Pour in the chicken broth and bring to a boil. Cover and simmer over low heat for 30-40 minutes, or until the chicken is tender.
- In a bowl, mix the flour with the milk, then add it to the broth and stir until you reach the desired consistency.
- Add lemon juice, salt, and pepper to taste. Serve hot.
