A traditional Saint-Louis dish, Chicken Chakhoolé is a delightful blend of chicken and vegetables marinated in a sweet and spicy sauce.

Ingredients
- 4 chickens, cut into pieces
- 200 g of onion, sliced
- 200 g of red bell peppers, sliced
- 100 g of zucchini, sliced
- 50 g of almonds, crushed
- 200 ml of palm oil
- 100 ml of water
- 1 tablespoon of chili powder
- 1 tablespoon of sugar
- Salt to taste
- 1 tablespoon of almond vinegar
- 1 tablespoon of lemon juice
Method
- In a bowl, mix the palm oil, water, chili powder, sugar, salt, and almond vinegar.
- Add the chicken pieces and let them marinate for at least 30 minutes.
- In a pan, sauté the onions until they become golden brown.
- Add the bell peppers and zucchini, cooking for 5 minutes.
- Add the marinated chicken pieces and cook over medium heat for 20-25 minutes, or until the chicken is fully cooked.
- Pour the prepared sauce over the onions, peppers, and zucchini with the chicken, mix well, and cook for another 5 minutes.
- Serving suggestion: serve the Chicken Chakhoolé with cooked rice.
