Cheese and Sausage Bruschette
A classic Belgian dish that combines sweet and savory flavors with cheese and sausage.

Ingredients
- 4 slices of toasted bread
- 100g of grated cheese (preferably gouda or cheddar)
- 100g of raw sausage
- 1 red onion, finely chopped
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1 tablespoon of chopped parsley (optional)
Method
- Toast the bread slices and let them cool.
- In a pan, heat the olive oil and the finely chopped red onion, sauté for a few minutes.
- Add the raw sausage and cook for 2-3 minutes, stirring frequently.
- Place the toasted bread slices on a baking tray.
- Sprinkle the grated cheese over the bread.
- Add the sausage and onion mixture on top of the cheese.
- Season with salt and pepper to taste.
- Finally, garnish with chopped parsley if desired.
The story
Cheese and sausage bruschette became popular in Belgium during the 20th century as a local variation of traditional Italian bruschette.
