Chairo is a traditional hearty soup from Ayacucho, rich in vegetables and goat meat.

Ingredients
- 2 kg of goat meat
- 2 pumpkins
- 2 onions
- 2 tomatoes
- 1 onion
- 1 red onion
- 200 g of potatoes
- 100 g of green beans
- 200 g of zucchini
- 1 liter of meat broth
- 1 teaspoon of chili powder
- salt and pepper to taste
Method
- Cut the goat meat into small pieces and simmer it with the meat broth for 2 hours.
- Meanwhile, chop the vegetables into small pieces and sauté them in a pan with a little oil.
- Add the onions and red onions, sauté for 10 minutes.
- Add the tomatoes, zucchini, potatoes, and green beans, sauté for another 10 minutes.
- Stir well and add the cooked goat meat, chili powder, salt, and pepper.
- Let it simmer for 30 minutes on medium heat.
- Serve the chairo hot, accompanied by toasted bread.

Chairo has historical roots in the ancient agricultural and culinary traditions of Ayacucho, where goat meat has always been an important part of the local diet.
