Cau Cau
A traditional Peruvian dish, cau cau is a delicious pepper, onion, and red onion sauce served with fried potatoes.

Ingredients
- 2 red bell peppers, sliced
- 2 onions, sliced
- 1 red onion, sliced
- 2 green onions, sliced
- 100 ml of tomato sauce
- 2 tablespoons of olive oil
- 1 teaspoon of black pepper
- 1 teaspoon of salt
- 100 g of potatoes, sliced
- 1 egg
- 2 tablespoons of white wine vinegar
- 2 tablespoons of fried onion
Method
- In a pan, sauté the olive oil with the onions and red onion on medium heat for 5-7 minutes.
- Add the red bell peppers and green onions, sauté for another 5-7 minutes.
- Add the tomato sauce, black pepper, and salt, stir well.
- Bring the sauce to a boil, reduce the heat and let it simmer for 10-15 minutes.
- In a separate pan, fry the potato slices until they are crispy.
- In a bowl, beat the egg with white wine vinegar, add the crispy potato slices and fried onions, mix well.
- Serve the cau cau hot over the crispy potatoes.
The story
Cau cau is a traditional Peruvian dish, particularly popular in Lima. Its origins date back to the colonial period when sailors used local ingredients to create unique and economical dishes.
