A warm and flavorful dish made with onions, bacon, and sausages in a pork broth.

Ingredients
- 200g bacon
- 200g sausage
- 1 onion
- 200g sausage
- 1 liter of pork broth
- 200g blood sausage
- 100g zucchini
- 200g cauliflower
- salt and pepper to taste
- 100g flour
- 200g potatoes
- 100g lentils
Method
- Cut the bacon, sausage, and onion into cubes.
- In a large pot, sauté the bacon and onion in a bit of oil.
- Add the sausages and blood sausages, stir well and cook for a few minutes.
- Add the pork broth, blood sausage, zucchini, cauliflower, salt, and pepper.
- Bring to a boil, cover, and simmer for 1-1.5 hours on medium-low heat.
- In a separate bowl, mix the flour with a bit of cold water to form a paste.
- Gradually add the paste to the broth, stir and cook for another 20-30 minutes.
- Finally, add the potatoes and lentils, cook for another 20-30 minutes.
- Serve hot with a drizzle of olive oil and a slice of bread.
The story
Cassoeula is a traditional dish from Bergamo, in the Lombardia region, with origins in the 19th century. It is a pork stew that has become a typical Christmas Day dish.
