Ingredients

  • 200g bacon
  • 200g sausage
  • 1 onion
  • 200g sausage
  • 1 liter of pork broth
  • 200g blood sausage
  • 100g zucchini
  • 200g cauliflower
  • salt and pepper to taste
  • 100g flour
  • 200g potatoes
  • 100g lentils

Method

  1. Cut the bacon, sausage, and onion into cubes.
  2. In a large pot, sauté the bacon and onion in a bit of oil.
  3. Add the sausages and blood sausages, stir well and cook for a few minutes.
  4. Add the pork broth, blood sausage, zucchini, cauliflower, salt, and pepper.
  5. Bring to a boil, cover, and simmer for 1-1.5 hours on medium-low heat.
  6. In a separate bowl, mix the flour with a bit of cold water to form a paste.
  7. Gradually add the paste to the broth, stir and cook for another 20-30 minutes.
  8. Finally, add the potatoes and lentils, cook for another 20-30 minutes.
  9. Serve hot with a drizzle of olive oil and a slice of bread.

The story

Cassoeula is a traditional dish from Bergamo, in the Lombardia region, with origins in the 19th century. It is a pork stew that has become a typical Christmas Day dish.
