Carrot Halwa
A traditional Indian sweet made from carrots, sugar, and milk, with a crunchy crust and a sweet taste.

Ingredients
- 500 grams of carrots
- 200 grams of sugar
- 500 ml of milk
- 1 teaspoon of ground cardamom
- 1 teaspoon of ground cinnamon
- 1 teaspoon of ground ginger
- 100 grams of almonds, chopped
- 100 grams of pistachios, chopped
- 1 teaspoon of vanilla essence
Method
- Wash and cut the carrots into small pieces.
- In a pot, bring the milk and sugar to a boil, then add the carrots and cook for 20-25 minutes, or until the carrots are soft.
- Add the cardamom, cinnamon, and vanilla essence, stir well.
- Reduce the heat and cook for another 10-15 minutes, or until the mixture is thick and smooth.
- Arrange in a baking dish and decorate with almonds and pistachios.
- Let it cool and serve.
The story
Gajar Halwa is a popular Indian sweet with roots tracing back to the 18th century. It was originally prepared as a way to use up carrots that would otherwise go to waste.
