Ingredients

  • 250 g of caracolle pasta
  • 400 g of wild mushrooms
  • 2 onions
  • 2 anise stars
  • 1/2 teaspoon of chili pepper
  • 1/2 teaspoon of salt
  • 200 ml of extra virgin olive oil
  • 100 ml of white wine
  • 100 g of grana cheese
  • 100 g of gorgonzola cheese
  • 100 g of pecorino cheese

Method

  1. Clean and slice the wild mushrooms.
  2. In a pan, sauté the onions in extra virgin olive oil and chili pepper.
  3. Add the mushrooms and cook for about 10 minutes.
  4. In a pot, mix the mushrooms, white wine, anise stars, and salt.
  5. Cook on low heat for 15 minutes, adding a bit of water if needed.
  6. 5 minutes before the end, add the grana, gorgonzola, and pecorino cheeses.
  7. Cook the caracolle pasta al dente in a colander.
  8. Add the pasta to the mushroom mixture and mix well.
  9. Serve hot, garnishing with pieces of grana and gorgonzola.
