Carapulcra
Carapulcra is a traditional Ica dish, rich in sweet potatoes, onions, and a hint of chili.

Ingredients
- 300g sweet potatoes
- 2 onions
- 200g dried beans
- 100g zucchini
- 1 chili pepper
- 200g mixed vegetables
- 500g pork meat
- 200ml palm oil
- 1 liter meat broth
- salt and pepper to taste
- 1 tablespoon apple cider vinegar
- 1 bay leaf
Method
- Peel and cut the sweet potatoes into cubes.
- In a pan, heat the palm oil and sauté the onions until they turn golden brown.
- Add the pork meat and cook until well done.
- In a casserole, add the sweet potatoes, beans, vegetables, and meat broth. Cover and cook on low heat for about 45 minutes.
- Add the zucchini, chili pepper, mixed vegetables, salt, and pepper. Stir well and cook for another 15 minutes.
- Finally, add the apple cider vinegar and the bay leaf. Stir well and let it heat up for a few more minutes before serving.
The story
Carapulcra originates from Peru, specifically the Ica region, where it has been a traditional home-cooked dish for centuries.
