A hearty Cape Breton scallop chowder, rich and delicious, made with beef scallops, potatoes, tomatoes, and fish broth.

Ingredients
- 400 g of beef scallops
- 4 potatoes
- 2 tomatoes
- 2 onions
- 1 red onion
- 200 ml of fish broth
- 200 ml of milk
- 1 tablespoon of thyme
- 1 tablespoon of parsley
- salt and pepper to taste
- 2 tablespoons of canola oil
- 1 finely chopped onion
Method
- In a large pan, heat the canola oil and sauté the chopped onion and other vegetables.
- Add the cubed potatoes and cook for 5 minutes.
- In a separate pot, bring the fish broth to a boil and add the chopped tomatoes.
- Mix the two preparations and add the beef scallops.
- Cook for 10 minutes, then add the milk, thyme, parsley, salt, and pepper.
- Let it boil for 5 more minutes and serve hot.
- It will be a great chowder to serve on a cold day.
