  • 250 g of smoked scamorza cheese, cut into thin strips

Method

  1. Cut the sole fillets in half along the widest side, creating two long and narrow pieces.
  2. Lay thin strips of smoked scamorza cheese and cooked ham on each fillet piece. Season with salt and pepper to taste.
  3. Carefully roll up the fillets around the fillings, sealing the rolls with a dusting of butter or flour to prevent them from opening during cooking.
  4. In a large skillet, heat some olive oil and cook the rolls on both sides until they turn golden brown and crispy. Add lemon juice at the end for a touch of acidity.
  5. Serve immediately alongside a leaf of Roman lettuce for presentation.
