Ingredients

  • 400g of mixed fish (fish and shellfish), cut into pieces
  • 200g of potatoes
  • 100g of pumpkin
  • 100g of yellow squash
  • 100g of carrots
  • 50g of onion
  • 200ml of olive oil
  • 200ml of white wine
  • 200ml of fish broth
  • 2 mint leaves
  • Salt and pepper to taste
  • Chopped parsley for serving

Method

  1. In a large pot, heat the olive oil and sauté the finely chopped onion.
  2. Add the sliced carrots and cubed potatoes. Cook for 5 minutes.
  3. Add the fish, white wine, and fish broth. Bring to a boil and cook for 15 minutes.
  4. Add the cubed pumpkin and yellow squash. Cook for another 10 minutes.
  5. Finally, add the mint leaves, salt, and pepper. Serve immediately with chopped parsley.
  6. Arrange the fish and vegetables on a serving dish, pouring the broth over them.
