Ingredients

  • 4 sweet potatoes
  • 200 g beef
  • 100 ml coconut oil
  • 1 onion
  • 1 chili pepper
  • 2 tablespoons curry powder
  • 1 tablespoon black pepper
  • 1 tablespoon ginger
  • 1 tablespoon chili powder
  • 1 tablespoon coriander
  • 1 tablespoon cloves
  • 1 tablespoon salt
  • Whole wheat bread for the sandwich

Method

  1. Prepare the sweet potatoes by slicing them thinly, then fry in coconut oil until crispy.
  2. In a pan, sauté the onion and chili pepper in coconut oil.
  3. Add the beef, curry powder, ginger, chili powder, coriander, cloves, and salt. Cook over medium heat for 15-20 minutes.
  4. Remove from heat and let cool.
  5. Halve the sweet potatoes and fill with the curry sauce.
  6. Cover with whole wheat bread and serve hot.

The story

Invented in the 1960s by Indian immigrants in Durban, bunny chow is a way to enjoy curry in a sandwich, adapting a traditional Indian dish to South African tastes.
