Ingredients

  • 400 g of pork stomach
  • 2 tablespoons of sesame oil
  • 2 onions, sliced
  • 4 garlic cloves, minced
  • 2 tablespoons of soy sauce
  • 1 tablespoon of Shaoxing cooking wine
  • 1 tablespoon of Sichuan pepper soy sauce
  • 1 tablespoon of chili bean sauce
  • 1 liter of water
  • 2 Chinese basil leaves
  • Salt to taste
  • Pepper to taste

Method

  1. Cut the pork stomach into evenly sized pieces.
  2. In a large pot, heat the sesame oil and sauté the onions and garlic for about 5 minutes.
  3. Add the pork stomach and cook for 5 minutes, until lightly browned.
  4. Pour in the water, add the soy sauce, Shaoxing cooking wine, Sichuan pepper soy sauce, chili bean sauce, and Chinese basil leaves.
  5. Bring to a boil, reduce the heat, and simmer slowly for about 1 hour, or until the pork stomach is tender.
  6. Cover the pot with a lid and add salt and pepper to taste.
  7. Serve hot, accompanied by rice.
