Braised Pork Stomach in Soy Sauce

Ingredients
- 400 g of pork stomach
- 2 tablespoons of sesame oil
- 2 onions, sliced
- 4 garlic cloves, minced
- 2 tablespoons of soy sauce
- 1 tablespoon of Shaoxing cooking wine
- 1 tablespoon of Sichuan pepper soy sauce
- 1 tablespoon of chili bean sauce
- 1 liter of water
- 2 Chinese basil leaves
- Salt to taste
- Pepper to taste
Method
- Cut the pork stomach into evenly sized pieces.
- In a large pot, heat the sesame oil and sauté the onions and garlic for about 5 minutes.
- Add the pork stomach and cook for 5 minutes, until lightly browned.
- Pour in the water, add the soy sauce, Shaoxing cooking wine, Sichuan pepper soy sauce, chili bean sauce, and Chinese basil leaves.
- Bring to a boil, reduce the heat, and simmer slowly for about 1 hour, or until the pork stomach is tender.
- Cover the pot with a lid and add salt and pepper to taste.
- Serve hot, accompanied by rice.
