  • vermicelli noodles
  • chopped green onions
  • crushed garlic
  • dried red chili pepper
  • soy sauce
  • granulated sugar
  • water
  • vegetable oil

Method

  1. Clean the duck and season it lightly with salt.
  2. In a large pot, simmer the duck for about 3 hours over medium-low heat in water with dried red chili pepper, crushed garlic, salt, and soy sauce until tender.
  3. Remove the skin from the duck and cut into strips. Reserve the cooking broth.
  4. In a pan, heat vegetable oil and fry the duck strips for 5 minutes until crispy.
  5. Cook vermicelli noodles in boiling water for about 3-4 minutes. Drain and toss with soy sauce, chopped green onions, and red chili pepper.
  6. Serve the vermicelli topped with the crispy duck strips.
