- vermicelli noodles

Method
- Clean the duck and season it lightly with salt.
- In a large pot, simmer the duck for about 3 hours over medium-low heat in water with dried red chili pepper, crushed garlic, salt, and soy sauce until tender.
- Remove the skin from the duck and cut into strips. Reserve the cooking broth.
- In a pan, heat vegetable oil and fry the duck strips for 5 minutes until crispy.
- Cook vermicelli noodles in boiling water for about 3-4 minutes. Drain and toss with soy sauce, chopped green onions, and red chili pepper.
- Serve the vermicelli topped with the crispy duck strips.
