A classic Irish dish, Boxty is a pancake made from mashed potatoes and grated raw potatoes, crispy on the outside and soft on the inside.

Ingredients
- 200g of cooked and mashed potatoes
- 200g of fresh potatoes
- 1 egg
- 1 tablespoon of chopped onion
- 1 tablespoon of butter
- 1/2 cup of flour
- Salt and pepper to taste
- Oil for frying
Method
- Boil and mash the cooked potatoes, then mix with the fresh potatoes, beaten egg, chopped onion, and butter.
- Add the flour, salt, and pepper, and mix well.
- Divide the dough into 4 parts and form small balls.
- Fry the dough balls in hot oil until they become crispy.
- Serve hot with butter or cucumber sauce.
The story
Boxty has roots dating back to the 19th century and is said to have been invented as a creative way to use potatoes, which were a staple of the local diet at the time.
