Ingredients

  • 200g of cooked and mashed potatoes
  • 200g of fresh potatoes
  • 1 egg
  • 1 tablespoon of chopped onion
  • 1 tablespoon of butter
  • 1/2 cup of flour
  • Salt and pepper to taste
  • Oil for frying

Method

  1. Boil and mash the cooked potatoes, then mix with the fresh potatoes, beaten egg, chopped onion, and butter.
  2. Add the flour, salt, and pepper, and mix well.
  3. Divide the dough into 4 parts and form small balls.
  4. Fry the dough balls in hot oil until they become crispy.
  5. Serve hot with butter or cucumber sauce.

The story

Boxty has roots dating back to the 19th century and is said to have been invented as a creative way to use potatoes, which were a staple of the local diet at the time.
