Ingredients

  • 4 fish fillets (such as salmon or tuna)
  • 100 g of rice
  • 1 onion
  • 1 cucumber
  • 100 g of beans
  • 50 g of zucchini
  • 100 ml of olive oil
  • 100 ml of fish stock
  • Salt and pepper to taste
  • 1 tablespoon of chopped parsley
  • 1 egg
  • 100 g of breadcrumbs

Method

  1. Cut the fish fillets into small pieces and set aside.
  2. In a bowl, mix the rice with olive oil, water, fish stock, salt, and pepper.
  3. Chop the onion, cucumber, and zucchini into cubes.
  4. In another bowl, mix the vegetable cubes, beans, egg, breadcrumbs, parsley, and salt.
  5. Thread the fish pieces with the rice and fill the fillets with the vegetable mixture.
  6. Wrap the stuffed fillets in kitchen paper and fry in hot oil.
  7. Serve hot, garnished with chopped parsley.
