Bouillabaisse Yuculubu
A delicious fish stew typical of Dakar, prepared with a robust broth and a selection of fresh fish.

Ingredients
- 4 pieces of mixed fish (for example, salmon, tuna, cod)
- 2 onions
- 2 carrots
- 2 cucumbers
- 2 tomatoes
- 2 small onions
- 2 garlic cloves
- 1 lemon
- 1 teaspoon of red pepper
- 1 liter of fish broth
- 3 tablespoons of palm oil
- Salt and pepper to taste
Method
- Prepare the fish by cutting the fillets and removing the skin.
- In a pot, sauté the garlic and palm oil with the onions, carrots, cucumbers, and small onions.
- Add the cubed tomatoes and fish broth, bringing to a boil.
- Add the fish fillets and cook for 5-7 minutes.
- Peel the lemon, slice it, and add it to the broth.
- Occasionally taste and add salt and pepper as needed.
- Serve hot with red pepper to taste.
The story
The bouillabaisse yuculubu is a traditional Dakar dish that has taken inspiration from the famous Provençal bouillabaisse, but with a local twist that includes typical Senegalese coastal ingredients.
