Ingredients

  • 200g of pig's blood
  • 300g of toasted and crumbled bread
  • 100g of pork fat
  • 1 egg
  • 2 tablespoons of chopped onion
  • 1 tablespoon of chopped parsley
  • 1 teaspoon of black pepper
  • 1 teaspoon of salt

Method

  1. In a bowl, mix the pig's blood, bread, pork fat, egg, chopped onion, parsley, black pepper, and salt.
  2. Let the mixture rest for 30 minutes to allow the blood to thicken.
  3. Prepare a wrapping of baking paper or parchment paper to form the black pudding.
  4. Pour the mixture into a tube or a wrapping of baking paper and form a ball.
  5. Press firmly to form a strong crust.
  6. Bake at 180°C for about 1 hour, checking occasionally to ensure the pudding does not dry out.
  7. Let it cool before slicing and serving with fried potatoes or vegetables.
