Black Pudding
Irish black pudding is a traditional, sweet and flavorful dish made with blood, bread, and spices.

Ingredients
- 200g of pig's blood
- 300g of toasted and crumbled bread
- 100g of pork fat
- 1 egg
- 2 tablespoons of chopped onion
- 1 tablespoon of chopped parsley
- 1 teaspoon of black pepper
- 1 teaspoon of salt
Method
- In a bowl, mix the pig's blood, bread, pork fat, egg, chopped onion, parsley, black pepper, and salt.
- Let the mixture rest for 30 minutes to allow the blood to thicken.
- Prepare a wrapping of baking paper or parchment paper to form the black pudding.
- Pour the mixture into a tube or a wrapping of baking paper and form a ball.
- Press firmly to form a strong crust.
- Bake at 180°C for about 1 hour, checking occasionally to ensure the pudding does not dry out.
- Let it cool before slicing and serving with fried potatoes or vegetables.
