A traditional dish from Jalisco, birria is a slow-cooked beef stew with a unique and delicious flavor, served with lime and tortillas.

Ingredients
- 1 kg of beef in chunks
- 2 liters of beef broth
- 2 onions, chopped
- 2 cloves of garlic, minced
- 1 chili pepper
- 2 tablespoons of dried chili
- 2 tablespoons of red wine vinegar
- 2 tablespoons of tomato paste
- 2 tablespoons of sweet onion, chopped
- salt and pepper to taste
- 1 onion, chopped
- 2 tablespoons of olive oil
Method
- In a large pot, heat the oil and the onion, sauté for 5 minutes.
- Add the garlic, chili pepper, and dried chili, sauté for another 2 minutes.
- Add the beef chunks, beef broth, tomato paste, red wine vinegar, sweet onion, and salt and pepper to taste.
- Bring to a boil, then reduce heat to medium and simmer for 2 hours, or until the beef is fully tender.
- Serving time: serve with lime and tortillas for a touch of acidity and crunch.
- Optional: add a bay leaf for an extra flavor.

Originating from the central-south region of Mexico, specifically Jalisco, birria has become a true culinary symbol. Its history dates back to the colonial times when beef was a luxury dish.
