Bindaetteok (빈대떡)
A traditional Korean dish made of soft and crispy mung bean patty, deliciously crispy and delightful!

Ingredients
- 200 g of mung beans
- 1 onion
- 200 g of mixed vegetables (e.g., carrots, pumpkin)
- 100 g of chicken or shrimp (optional)
- 2 eggs
- 2 tablespoons of soy sauce
- Salt and pepper to taste
- 1 tablespoon of soybean oil for frying
Method
- Rinse and blanch the mung beans for 10-15 minutes, then cool and blend them until you get a smooth paste.
- Dice the onion and vegetables into small cubes.
- In a bowl, mix the egg, bean paste, onion, vegetables, chicken or shrimp (if using), soy sauce, salt, and pepper.
- Form small balls with the mixture and coat them in a flour bowl to create a crust.
- Fry the balls in soybean oil over medium heat until crispy and golden brown.
- Serve hot with soy sauce or soy sauce.

Bindaetteok is a traditional Seoul dish that originated in rural areas, where families used mung beans as a main ingredient to prepare affordable and nutritious meals.
