Bhelpuri
A classic Pune street food, crispy and fresh, perfect for an aperitif.

Ingredients
- 150g of fried potatoes
- 100g of yellow split peas
- 50g of chopped onion
- 50g of chopped carrot
- 100g of green beans
- 50g of chopped red onion
- 50g of chopped tomato
- 100g of toasts
- 2 tablespoons of soy sauce
- 2 tablespoons of balsamic vinegar
- 1 tablespoon of sugar
- 1 tablespoon of sesame oil
- 1 tablespoon of chopped cilantro
- 1 tablespoon of chopped coriander
- Salt and pepper to taste
Method
- Fry the potatoes and yellow split peas in sesame oil until crispy. Drain and let them cool.
- Cut the toasts into pieces.
- In a bowl, mix the soy sauce, balsamic vinegar, sugar, sesame oil, cilantro, and coriander.
- Add the potatoes, peas, vegetables, and spices to the sauce and mix well.
- Finally, add the toasts pieces and gently mix.
- Spoon the bhelpuri onto a plate and serve immediately, accompanied by a cilantro and coriander sauce.
- Bhelpuri ready to be enjoyed!
