Ingredients

  • 500 g of beef fillet
  • 2 black truffles
  • 2 onions
  • 2 cloves of garlic
  • 2 tablespoons of butter
  • 100 ml of dry white wine
  • 50 ml of beef broth
  • salt and pepper to taste
  • 2 basil leaves
  • 2 tablespoons of olive oil
  • 1 tablespoon of flour

Method

  1. Slice the beef fillet into thin pieces and season with salt.
  2. In a pan, start browning the beef slices with a bit of olive oil.
  3. Sauté the onions and garlic and add them to the beef, browning for a few minutes.
  4. Cut the black truffles into small pieces and add them to the pan.
  5. In a bowl, mix the butter, white wine, beef broth, and flour. Add this mixture to the pan and let it boil for 5 minutes.
  6. Add the basil leaves, salt, and pepper and stir well.
  7. Serve the beef with truffles hot, accompanied by a truffle cream sauce or a truffle reduction.

The story

Beef with truffles has roots in the Middle Ages, but became particularly popular in Burgundy in the 17th century, thanks to the abundance of truffles in the region.
