A classic of Trujillo's Peruvian cuisine, Beef Seco is a delicious preparation of slowly roasted beef with vegetables and spices.

Ingredients

  • 750 g of beef
  • 1 onion
  • 2 carrots
  • 2 broccoli
  • 2 leeks
  • 1 zucchini
  • 1 lemon
  • 2 garlic cloves
  • 100 ml of olive oil
  • 100 ml of red wine
  • salt and pepper
  • 100 ml of water

Method

  1. Cut the beef into pieces about 2 x 2 cm, mince the garlic, and cut the vegetables into small pieces.
  2. In a large pan or pot, heat the olive oil and sauté the chopped vegetables for 10 minutes over medium heat.
  3. Add the beef, garlic, and salt, stir well, and cook for another 5 minutes.
  4. Pour in the red wine and let it evaporate for 5 minutes, then add the water and cover.
  5. Bring to a boil, reduce heat, and simmer slowly for 2 hours, checking occasionally.
  6. At the end of cooking, add the lemon juice and stir well. Serve hot.

Beef Seco is a culinary tradition dating back to the Spanish colonization era, when conquerors brought long-cooking techniques to preserve meat.
