Beef Seco

A classic of Trujillo's Peruvian cuisine, Beef Seco is a delicious preparation of slowly roasted beef with vegetables and spices.

Ingredients
- 750 g of beef
- 1 onion
- 2 carrots
- 2 broccoli
- 2 leeks
- 1 zucchini
- 1 lemon
- 2 garlic cloves
- 100 ml of olive oil
- 100 ml of red wine
- salt and pepper
- 100 ml of water
Method
- Cut the beef into pieces about 2 x 2 cm, mince the garlic, and cut the vegetables into small pieces.
- In a large pan or pot, heat the olive oil and sauté the chopped vegetables for 10 minutes over medium heat.
- Add the beef, garlic, and salt, stir well, and cook for another 5 minutes.
- Pour in the red wine and let it evaporate for 5 minutes, then add the water and cover.
- Bring to a boil, reduce heat, and simmer slowly for 2 hours, checking occasionally.
- At the end of cooking, add the lemon juice and stir well. Serve hot.

Beef Seco is a culinary tradition dating back to the Spanish colonization era, when conquerors brought long-cooking techniques to preserve meat.
