A traditional Balinese dish, Bebek Betutu is a slow-cooked duck marinated in spices and avocado, perfect for special occasions.

Ingredients
- 400g of duck meat
- 1 avocado
- 2 tablespoons of chili paste
- 2 tablespoons of coconut oil
- 2 onions
- 1 red onion
- 2 dried dates
- 1/2 cup of soy sauce
- 1/2 cup of lemon juice
- 2 pieces of ginger
- 1 piece of galangal
- Salt to taste
Method
- Clean and cut the duck into pieces. Boil for 5 minutes, drain, and cool.
- Mince the garlic, ginger, and galangal. Soak the dates in warm water.
- In a bowl, mix the chili paste, coconut oil, garlic, ginger, galangal, onions, red onions, and dates.
- Add the duck and the cooking water. Mix well.
- Cover the bowl with an aluminum lid and let it rest for 2 hours.
- Place a large pot and put a weight on top of the lid to maintain pressure.
- Bring the mixture to a boil and cook on low heat for 3 hours, adding water if necessary.
- Serving: serve the duck with the sauce and season with salt and lemon.
