Beans and Potatoes

A delicious and nutritious bean and potato soup, typical of Alghero in Sardinia.

Ingredients
- 250g of soy beans
- 500g of potatoes
- 1 onion
- 2 cloves of garlic
- 2 liters of beef broth
- 1 tablespoon of olive oil
- salt and pepper to taste
- 2 basil leaves
- 100g of capers
- 100g of green beans
- 1 tablespoon of balsamic vinegar
Method
- In a large pot, heat the olive oil and sauté the garlic and onion until golden brown.
- Add the soy beans and green beans, stir well.
- Pour in the beef broth, bring to a boil and let simmer for about 20 minutes.
- Add the cubed potatoes, salt, and pepper, stir.
- Continue cooking on medium heat for another 20-25 minutes, until the potatoes are soft.
- Add the basil leaves and capers, stir and let infuse for a few minutes.
- Add a splash of balsamic vinegar to aromatize.
- Serve hot, garnished with a drizzle of balsamic vinegar and fresh basil.
