Ingredients

  • 250g of soy beans
  • 500g of potatoes
  • 1 onion
  • 2 cloves of garlic
  • 2 liters of beef broth
  • 1 tablespoon of olive oil
  • salt and pepper to taste
  • 2 basil leaves
  • 100g of capers
  • 100g of green beans
  • 1 tablespoon of balsamic vinegar

Method

  1. In a large pot, heat the olive oil and sauté the garlic and onion until golden brown.
  2. Add the soy beans and green beans, stir well.
  3. Pour in the beef broth, bring to a boil and let simmer for about 20 minutes.
  4. Add the cubed potatoes, salt, and pepper, stir.
  5. Continue cooking on medium heat for another 20-25 minutes, until the potatoes are soft.
  6. Add the basil leaves and capers, stir and let infuse for a few minutes.
  7. Add a splash of balsamic vinegar to aromatize.
  8. Serve hot, garnished with a drizzle of balsamic vinegar and fresh basil.
