Ingredients

  • 300g of beans
  • 2 carrots
  • 2 onions
  • 2 bacon strips
  • 1 zucchini
  • 1 red onion
  • 200g of potatoes
  • 1 liter of beef broth
  • salt and pepper to taste
  • 1 tablespoon of sea salt
  • 1 tablespoon of wine vinegar
  • 200g of cubed vegetables

Method

  1. In a large pot, heat the oil and sauté the onions and carrots until they soften.
  2. Add the bacon and fry until crispy.
  3. Add the beans, beef broth, cubed vegetables, salt, and wine vinegar. Bring to a boil and cook for 30 minutes.
  4. Add the potatoes and zucchini, cover, and cook for an additional 20 minutes.
  5. Stir occasionally and taste to adjust the seasoning.
  6. Serve hot with a sprinkle of sea salt on the side.

Gorohivnyak is a traditional soup that dates back to the agricultural origins of Ukraine, where beans have been a significant part of the diet for generations.
