Barbacoa Tacos

Ingredients
- 400 g of lamb or pork
- 1 onion
- 2 dried chiles
- 2 scallions
- 2 tablespoons of chili powder
- 2 tablespoons of salt
- 1 tablespoon of black pepper
- 1 tablespoon of balsamic vinegar
- 1 bay leaf
- 1 liter of water
- 1 tablespoon of olive oil
Method
- In a large pot, combine the water, olive oil, chili powder, salt, black pepper, bay leaf, and balsamic vinegar. Bring to a boil.
- Add the meat and cook over medium heat for about 3 hours, or until the meat is fully tender.
- Chop the onion, scallions, and dried chiles into small pieces. Add them to the meat and cook for an additional 30 minutes.
- Prepare the corn tortillas and warm them in a tortilla warmer.
- Place the tortillas on a plate and top with the meat. Serve immediately.
