Banh Canh

A dish of thin noodles served in a creamy chicken or pork broth, accompanied by various crunchy vegetables and spicy condiments.

Ingredients
- tapioca noodles (banh canh)
- chicken breast
- cooked ham
- kale
- pickles
- fresh mint leaves
- garlic
- red chili pepper
- balsamic vinegar
- olive oil
Method
- In a large pot, cook the tapioca noodles in boiling water for about 5 minutes or until al dente. Rinse and set aside.
- Meanwhile, slice the chicken breast into thin strips and sauté lightly with some olive oil, minced garlic, and red chili pepper for 3-4 minutes. Add cold water to cover the chicken completely and simmer for another 15 minutes.
- Slice the kale and pickles thinly, season with a bit of balsamic vinegar and red chili pepper. Set aside.
- In a large bowl, place the cooked noodles over the chicken broth and garnish with sliced ham strips.
- Serve immediately with crunchy vegetables and fresh mint leaves.
