  • 4 eggs
  • 150 g bacon cut into strips
  • 100 g grated cheese (preferably Gouda)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 optional bay leaf
  • 2 tablespoons chicken broth

Method

  1. Heat a thick-bottomed frying pan on medium heat and add olive oil, letting it warm up.
  2. Add the bacon and fry for 2-3 minutes until golden brown.
  3. In a bowl, separate the eggs and add salt and pepper to taste.
  4. Add the grated cheese to the eggs and mix well.
  5. Pour the egg and cheese mixture over the bacon in the pan, spreading it evenly.
  6. Place the bay leaf (if using) on top and pour the chicken broth over the mixture.
  7. Shake the pan to distribute the broth and cover with a lid.
  8. Cook on medium heat for 10-15 minutes, checking periodically to ensure the cheese does not burn.
  9. Serve hot, garnished with a drizzle of extra virgin olive oil and chopped parsley.
