Bacon and Cabbage
A classic of Irish cuisine, Bacon and Cabbage is a hearty and delicious dish, perfect for a cold winter day.

Ingredients
- 2 kg of cabbage
- 500 g of bacon
- 2 onions
- 2 garlic cloves
- 1 liter of beef broth
- 2 tablespoons of salt
- 1 tablespoon of black pepper
- 2 sprigs of rosemary
- 2 sprigs of thyme
Method
- Wash the cabbages and cut them into pieces. Peel and thinly slice the onions.
- In a pan, heat some oil and sauté the onions and garlic until they are golden brown.
- Add the bacon and sauté for a few minutes.
- In a large pot, add the broth, cabbage pieces, cooked onions, garlic, and bacon oil.
- Cover the pot and cook on low heat for about 2 hours, or until the cabbages are soft.
- Turn off the heat and add salt, pepper, rosemary, and thyme. Mix well.
- Let it cool for a few minutes before serving.

Bacon and Cabbage has its roots in the agricultural history of Ireland, where cabbage was one of the few vegetables that could be grown during winter.
