  • 200 g of dried cod, cut into cubes
  • 200 g of chouriço, cut into cubes
  • 2 onions, chopped
  • 2 carrots, diced
  • 100 g of potatoes, cut into cubes
  • 200 ml of fish broth
  • 200 ml of white wine
  • 2 tablespoons of olive oil
  • salt and pepper to taste
  • 2 basil leaves
  • 1 tablespoon of balsamic vinegar

Method

  1. In a large pan, heat the olive oil and sauté the onions until they become translucent.
  2. Add the chouriço and carrots, stirring well for a couple of minutes.
  3. Add the cod cubes, fish broth, and white wine, bringing to a boil.
  4. Reduce the heat and simmer for about 30 minutes, stirring occasionally.
  5. Add the potatoes, basil leaves, and balsamic vinegar, stirring well.
  6. Continue cooking for another 15-20 minutes, until the potatoes are cooked and the broth is absorbed.
  7. Serve the Bacalhau com Chouriço hot in a dish.
