Bacalhau com Chouriço

Ingredients
- 200 g of dried cod, cut into cubes
- 200 g of chouriço, cut into cubes
- 2 onions, chopped
- 2 carrots, diced
- 100 g of potatoes, cut into cubes
- 200 ml of fish broth
- 200 ml of white wine
- 2 tablespoons of olive oil
- salt and pepper to taste
- 2 basil leaves
- 1 tablespoon of balsamic vinegar
Method
- In a large pan, heat the olive oil and sauté the onions until they become translucent.
- Add the chouriço and carrots, stirring well for a couple of minutes.
- Add the cod cubes, fish broth, and white wine, bringing to a boil.
- Reduce the heat and simmer for about 30 minutes, stirring occasionally.
- Add the potatoes, basil leaves, and balsamic vinegar, stirring well.
- Continue cooking for another 15-20 minutes, until the potatoes are cooked and the broth is absorbed.
- Serve the Bacalhau com Chouriço hot in a dish.
