A traditional Portuguese dish, Bacalhau à Portimão is a salty delight with a touch of tomato and garlic.

Ingredients

  • 500 g of salted cod
  • 100 g of tomatoes
  • 2 onions
  • 2 cloves of garlic
  • 50 g of butter
  • 50 g of flour
  • 1 l of fish broth
  • 100 ml of white wine
  • 50 g of parsley
  • salt and pepper to taste
  • 2 tablespoons of extra virgin olive oil

Method

  1. Rinse the salted cod and dry it well. Slice the onions thinly and mince the garlic.
  2. In a pan, heat the oil and butter, add the onions and garlic, and sauté for 5 minutes.
  3. Add the cubed tomatoes, stir and cook for 10 minutes.
  4. In another pot, mix the flour with the fish broth and white wine, bringing to a boil.
  5. Add the vegetable sauce and cook for 10 minutes.
  6. Finally, add the cod, parsley, salt, and pepper to taste, stir and let it boil for 5 minutes.
  7. Serve hot with a drizzle of extra virgin olive oil.
